Instructions:
1. Prepare the fish skins

  • Start with fresh fish skins. You can often ask your local fishmonger for fish skins, or you can remove them from whole fish at home. Make sure the skins are clean and free from scales.
  • Rinse the fish skins under cold water and pat them dry with paper towels.

2. Seasoning (optional)

  • If desired, season the fish skins with your preferred seasonings. Common choices include paprika, garlic powder, onion powder, cayenne pepper, or any other flavors you like. Sprinkle the seasoning evenly over the fish skins.

3. Cut and prepare

  • Cut the fish skins into smaller, chip-sized pieces. They will shrink slightly during cooking, so keep that in mind when cutting.
  • Place the prepared fish skin pieces on a clean, dry surface and lightly sprinkle them with salt. Let them sit for about 15-20 minutes. This helps draw out excess moisture, which will contribute to their crispiness.

4. Preheat the oil

  • Heat the frying oil in a deep pan or pot. You'll want enough oil to fully submerge the fish skin pieces. Heat the oil to around 350-375°F (175-190°C).

5. Fry the fish skin chips

  • Carefully lower the fish skin pieces into the hot oil using tongs. Avoid overcrowding the pan – fry in batches if needed.
  • Fry the fish skin chips for about 2-3 minutes, or until they turn golden brown and crispy. Keep a close eye on them, as they can burn quickly.

6. Drain and season

  • Once the fish skin chips are golden brown and crispy, use a slotted spoon to remove them from the oil. Place them on a plate lined with paper towels to drain any excess oil.

7. Season (again, optional)

  • While the chips are still hot, you can sprinkle them with a bit more salt or your chosen seasonings to enhance the flavor.

8. Serve

  • Once the fish skin chips have cooled slightly and any excess oil has been absorbed by the paper towels, transfer them to a serving dish.
  • Enjoy them as a standalone snack or serve them with your favorite dipping sauce.
