This fish typically grows to a size of around 8 to 10 pounds, although larger specimens can reach up to 35 pounds. The premium commercial size is usually between 2 to 4 pounds, yielding fillets of about 10 ounces.

Physical Characteristics

  • Colour: The skin is rose red on top, becoming lighter towards the underside, with bright red eyes.
  • Fins: The fins are red, with the dorsal fin edged in orange.
  • Size: Can grow to over 130 pounds, but most caught are smaller.
  • Distinctive Features: Younger fish may have black spots, which often fade in older specimens.

Culinary Uses

  • Taste: Known for its sweet, mild flavour, it adapts well to various cooking methods.
  • Texture: Firm and flaky, making it suitable for grilling, baking, or frying.
  • Storage: Frozen fillets should be kept at or below 0°F (-18°C) and can last up to 18 months. Proper thawing is recommended by placing in the refrigerator for 12-24 hours.
