1. Keep It Cold Immediately

Fish is highly perishable and should be kept cold from the moment it is caught or purchased. Bacteria multiply quickly at warm temperatures, so chilling fish slows down spoilage. If you’re fishing, place the fish on ice in a cooler right away. If you’re buying from a store, bring an insulated bag or cooler with ice packs to keep it cold until you get home.

2. Store in the Refrigerator Properly

If you plan to cook your fish within a day or two, storing it correctly in the refrigerator is essential. Follow these steps:

  • Use Ice or a Cold Tray: Place the fish on a plate or in a shallow dish filled with crushed ice, then cover it loosely with plastic wrap or aluminium foil.
  • Keep It in the Coldest Part: Store the fish in the coldest part of your fridge, usually the back of the bottom shelf, where the temperature remains most stable.
  • Drain Excess Water: If storing fish on ice, replace the ice and drain any melted water regularly to prevent the fish from sitting in moisture, which can degrade its texture.

3. Freeze for Long-Term Storage

If you won’t be cooking your fish within a couple of days, freezing is the best way to preserve its freshness. Follow these freezing guidelines:

  • Pat Dry First: Remove excess moisture by patting the fish dry with paper towels.
  • Use Airtight Wrapping: Wrap the fish tightly in plastic wrap, aluminium foil, or vacuum-sealed bags to prevent freezer burn.
  • Label and Date: Always label the package with the date of freezing. Most fish can stay fresh in the freezer for up to three months, but fatty fishlike salmon or mackerel should be consumed within two months for the best taste.

4. Thawing the Right Way

When you’re ready to cook frozen fish, avoid rapid thawing methods that can compromise texture and safety. The best ways to thaw fish include:

  • Refrigerator Thawing: Place the fish in the fridge overnight to thaw slowly and evenly.
  • Cold Water Method: If you need to thaw it faster, seal the fish in a plastic bag and submerge it in cold water, changing the water every 30 minutes.
  • Avoid Hot Water and Microwaves: These methods can partially cook the fish and cause uneven texture.

5. Use Freshness Indicators

Even with proper storage, it’s essential to check for signs of spoilage before cooking. Fresh fish should have:

  • Clear, bright eyes (if whole)
  • Firm, shiny flesh that bounces back when pressed
  • A mild, ocean-like smell (not sour or ammonia-like)

If the fish has a strong, unpleasant odour or slimy texture, it’s best to discard it.
