3. Use Proper Packaging

  • Uniform Distribution: Place the fish in a single layer on the blast freezer racks. Avoid overcrowding to ensure even freezing.

5. Set the Right Freezing Parameters

  • Temperature Control: Set the air blast freezer to the appropriate temperature, typically between -35°C to -40°C (-31°F to -40°F). This will ensure the fish freezes rapidly without forming large ice crystals that could damage its cellular structure.
  • Air Speed: Adjust the airspeed in the ABF to ensure its optimal for fast freezing. The faster the airspeed, the quicker the fish will freeze.

6. Monitor Freezing Time

  • Ensure Complete Freezing: Depending on the thickness of the fish and the air speed, it can take anywhere from 2 to 6 hours to fully freeze. It’s important to monitor the process to ensure that the fish is frozen all the way through.

7. Post-Freezing Storage

  • Transfer to Deep Freezer: Once the fish is frozen in the ABF, transfer it to a deep freezer or a storage freezer at a constant temperature of -18°C (0°F) or lower to maintain quality until it's ready to be used or shipped.
  • Label and Date: Properly label and date the frozen fish so you can track its storage time and ensure it's used before it loses quality.
