Ingredients:

  • Fresh scallops (dry-packed if possible)
  • Salt and pepper to taste
  • Butter or olive oil for searing
  • Lemon wedges (optional, for serving)

Instructions:

  1. Pat the scallops dry with a paper towel to remove any excess moisture. Moisture on the surface of the scallops can prevent them from getting a nice sear.
  2. Season both sides of the scallops with salt and pepper. You can add other seasonings according to your preference, but simple salt and pepper work great to let the natural flavor of the scallops shine.
  3. Place a non-stick skillet or a well-seasoned cast-iron skillet over medium-high heat. Add a little butter or olive oil to the pan and swirl it around to coat the surface.
