  • 1 lb (450g) white fish fillets (such as cod, haddock, or tilapia), cut into chunks
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large tomatoes, diced
  • 1 carrot, peeled and sliced
  • 1 celery stalk, sliced
  • 1 leek, cleaned and sliced (white and light green parts only)
  • 4 cups fish or vegetable broth
  • 1 cup water
  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges (for serving)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened and translucent, about 2-3 minutes.
  2. Add the diced tomatoes, sliced carrot, celery, and leek to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the fish or vegetable broth and water. If using white wine, add it to the pot as well. Bring the mixture to a simmer.
  4. Add the bay leaf, dried thyme, paprika, salt, and pepper to the pot. Stir well to combine all the flavors.
  5. Gently add the fish chunks to the soup. Be careful not to break them up too much. Let the soup simmer for about 8-10 minutes or until the fish is cooked through and flakes easily with a fork.

  7. Remove the bay leaf and discard it.
