Indonesian Delight! Traditional Prawn Sambal Recipe

Sambal is Indonesian chili paste that usually goes with many Indonesian dishes. Ingredients needed:

  • 500 grams Fresh prawns (peel, split the back, and devein)
  • 4-5 cloves Garlic
  • 6-8 Shallots
  • 6-8 Large red chili (to taste, less if you don't like it too spicy)
  • 5-10 Cayenne pepper (optional) (add if you want more heat)
  • 1 Tomatoes (cut into small cubes)
  • 1 teaspoon shrimp paste
  • 1 teaspoon sugar
  • 1/2 teaspoon Salt
  • 2-3 tablespoons Cooking oil

Steps:

  1. First, mash the garlic, shallots, red chili, and cayenne pepper (if using) in a mortar or blender. Add a pinch of salt.
  2. Heat the cooking oil in a wok or frying pan over medium heat.
  3. Sauté the pureed spices until fragrant and cooked. Stir continuously to prevent the spices from burning.
  4. After the spices are cooked, add the tomato pieces and shrimp paste. Continue sautéing until the tomatoes are soft and the shrimp paste is well mixed.
  5. Put the prawn that has been prepared before into the pan. Mix well with the seasoning and cook until the prawn turns red-orange in color and fully cooked.
  6. Add sugar and salt according to your taste. Stir again to ensure the seasoning is fully absorbed into the prawn.
  7. Taste the prawn sambal, and adjust the flavor if needed by adding sugar or salt to taste.
  8. Once the flavor is right, remove the prawn sambal from the wok or frying pan.

 

The prawn sambal is ready to be served as a complement to your meal. This sambal is delicious with warm white rice or fried rice. Enjoy!
