Simple Recipe to Make Oyster Omelette at Home

Ingredients:
For the Batter:

  • 1/2 cup sweet potato starch (you can also use tapioca starch or cornstarch)
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper

For the Omelette:

  • 4 large eggs
  • 1 cup small to medium-sized fresh oysters, drained and patted dry
  • 1/2 cup Chinese or Napa cabbage, finely chopped
  • 2-3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • Chopped cilantro and green onions for garnish

Instructions:

  1. In a bowl, combine the sweet potato starch, water, salt, and ground white pepper. Mix until smooth. Set aside.
  2. In a separate bowl, beat the eggs until well combined. Set aside.
  3. Heat a large non-stick skillet or wok over medium-high heat. Add about a tablespoon of oil and spread it around to coat the pan evenly.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the chopped Chinese cabbage and stir-fry for another 1-2 minutes until it starts to wilt. Push the cabbage to one side of the pan.
  6. Pour the beaten eggs into the pan, covering the other half of the pan not occupied by the cabbage.
  7. Allow the eggs to cook for a minute or so until they start to set.
  8. Scatter the oysters evenly over the omelette.
  9. Give the sweet potato starch batter a good stir to make sure it's well mixed, and then slowly pour it over the omelette, covering everything.
  10. Drizzle the oyster sauce, soy sauce, and rice vinegar over the top of the omelette.
  11. Continue cooking for another 2-3 minutes, or until the edges of the omelette start to crisp up and turn golden brown.
  12. Carefully flip half of the omelette over the other half using a spatula. Press down gently to make sure everything sticks together.
  13. Transfer the oyster omelette to a serving plate. Garnish with chopped cilantro and green onions.
