Instructions:

  1. In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook for about 5-7 minutes, or until the vegetables start to soften.
  2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the diced potatoes, dried thyme, bay leaf, salt, and pepper to the pot. Stir to combine.
  4. Pour in the fish or seafood broth and bring the mixture to a simmer. Let it cook for about 10-15 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, gently stir in the mixed seafood. Let the seafood cook in the chowder for about 5-7 minutes, or until cooked through. Be careful not to overcook the seafood.
  6. Reduce the heat to low and pour in the milk or heavy cream. Stir gently to combine and heat through. Make sure not to boil the chowder once the cream is added to prevent curdling.
  7. Taste the chowder and adjust the seasoning with additional salt and pepper, if needed.
  8. Remove the bay leaf from the chowder and discard.
  9. Serve the seafood chowder hot, garnished with chopped parsley and optional cooked bacon bits, if desired.
  10. Enjoy your comforting and flavorful homemade seafood chowder with some crusty bread or crackers on the side!
