A Perfect Recipe of Creamy Scallop Pasta

Ingredients:

  • 8 oz (225g) linguine or fettuccine pasta
  • 12-16 large sea scallops, patted dry
  • Salt and pepper to taste
  • 2 tablespoons butter, divided
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or substitute with chicken stock
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • Red pepper flakes (optional, for heat)
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
  2. Season the scallops with salt and pepper on both sides.
  3. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat.
  4. Add the scallops to the skillet and cook for about 2-3 minutes on each side, or until they are golden brown and cooked through. Remove the scallops from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of butter and 1 tablespoon of olive oil.
  6. Add the minced garlic and sauté for about 1 minute until fragrant.
  7. Pour in the white wine and let it simmer for a couple of minutes to reduce slightly.
  8. Lower the heat and add the heavy cream to the skillet, stirring to combine.
  9. Stir in the grated Parmesan cheese and lemon zest. Allow the sauce to simmer gently for a few minutes until it thickens.
  10. Add the cooked pasta to the skillet with the creamy sauce. Toss to coat the pasta with the sauce.
  11. Divide the creamy pasta among serving plates or bowls.
  12. Place the cooked scallops on top of the pasta.
  13. Sprinkle with chopped parsley and red pepper flakes (if using) for added flavor and color.
  14. Season with additional salt and pepper to taste.

 

Serve the creamy scallops pasta immediately while it's hot. Enjoy!
