Ingredients:

  • 500g fresh salmon fillet, skinless and boneless
  • 1 cup fresh basil leaves
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon unflavored gelatin
  • 1/4 cup cold water
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to soften.
  2. While the gelatin is softening, prepare the salmon by cutting it into small pieces. You can also pulse it a few times in a food processor until you get a coarse texture.
  3. In a large mixing bowl, combine the chopped salmon, basil, green onions, dill, parsley, and chives. Mix everything together.
  4. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, and lemon juice until well combined. Season with salt and pepper according to your taste.
  5. Heat the softened gelatin in the microwave for about 15-20 seconds until it's fully dissolved.
  6. Add the dissolved gelatin to the mayonnaise mixture and stir well.
  7. Pour the mayonnaise mixture over the salmon and herb mixture. Gently fold everything together until the salmon is evenly coated with the mixture.
  8. Line a terrine mold or a loaf pan with plastic wrap, leaving enough overhang on the sides.
  9. Carefully spoon the salmon mixture into the prepared mold, pressing down gently to ensure there are no air pockets.
  10. Cover the top of the terrine with the overhanging plastic wrap and refrigerate for at least 4 hours or until set.
  11. Once the terrine is set, remove it from the mold by gently pulling the plastic wrap.
  12. Slice the terrine and serve it on a platter with some fresh basil leaves and lemon wedges for garnish.
